Introduction: Arikalu or Kodo is very high in fibre content, especially when it is whole grain. It loses much of its nutritive value, like other cereals and grains, when polished. The nutritive value of Kodo millet can be enhanced when supplemented with lentils or pulses. Kodo, hence, goes well with dals or a good gravy of any of the pulses.
Usage : This can be cooked as rice and can easily replace rice in making idli, dosa, kichidi, pongal etc. While the taste of your routine foods gets better, you also infuse nutrients in to your daily diet.
